After buying the Cuisinart Ice Cream Maker, I have been making my own ice cream and have never had to buy store-bought ice cream again, most of which has high fruit corn syrup and other undesirable ingredients. It only takes 15 minutes & no ice or salt!! Here is my basic recipe for:
Vanilla Ice Cream:
6-7 fresh eggs
1/2 c each xylitol and honey (or 1 c sugar)
2 T REAL Vanilla **This is the secret to good vanilla ice cream.
1 qt. Heavy Cream
Put ingredients in a blender and blend, adding cream last. You may have to reserve some to add after placing in the ice cream maker. Process. Makes 2 qt.
For Strawberry: add 2 1/2 c fresh strawberries and 1/4 c stevia (if unsweetened) or 1/2 c sugar and cut vanilla to 1T to blender before adding cream.
Peach: add 2 1/2 c fresh peaches, reduce vanilla to 1 T and add 1/2 to 1 t almond extract to blender before adding cream.
Coconut Pecan: Replace 1 c of the cream with a can of chilled high fat coconut cream, reduce vanilla to 1T and add 2 t coconut extract before adding cream. 5 minutes before the ice cream is done, add 1 1/4 c coconut (sweet or unsweetened) and 1 c chopped toasted pecans.
Banana: Reduce vanilla to 1T and blend in 3-4 ripe bananas before adding cream.
Cappuccino Chunky Chocolate: Heat 1-2T of the cream to dissolve 2T instant coffee in & add to the blender along with other ingredients. Also, add an extra 1/4 c xylitol since the coffee isn’t sweet & reduce vanilla to 1T. Then AFTER the ice cream is almost done, add to the ice cream maker 1 to 1 1/2 c. chopped dark or semi-sweet chocolate. I just use a good quality chocolate bar.
Mint Chocolate Chip: Reduce vanilla to 1 T. Add 1 t mint extract and 3 drops green food color (optional) to the vanilla mix in the blender. Add 1 1/4 c. mini choc. chips to the ice cream maker right before it is done. If this is too minty, try 1/2 t mint extract.
Chocolate Almond: Increase Xylitol to 3/4 c and mix with 1 c cocoa and 1 c cream . Heat until blended then add to the other ingredients, only add 1 T vanilla and add 1 t almond extract. You may also want to just use 6 eggs to leave more room for cream. Again, for some of the recipes you have to add the last of the cream after you start & fill the ice cream maker if it doesn’t fit in your blender. When the ice cream is almost done, add 1 or more c of chopped toasted almonds.
Peanut Butter Cup: Use 6 eggs, reduce vanilla to 1T & add 1 c creamy peanut butter to blender mixture. Blend with as much cream as you can and add what remains to the ice cream maker after you have started it. Leave room for a small bag of chopped peanut butter cups.
These should encourage you to try some ideas of your own, which is what I have done!
